Second Chance Cafe, opens Friday, 13 November

About 18 months ago, I had the privilege of meeting with three other south-east Queensland authors – Noelle Clark, Susanne Bellamy and Eva Scott.

A lovely lunch discussing all things literary ended with the suggestion that we write a short story anthology.

We did and it was called A Season To Remember and, as the name suggests it was centred on Christmas. It also had a secondary theme – the sea.

It’s amazing what different authors will do with a simple theme – four very different and enjoyable short stories.

Naturally when we met for lunch again in the new year we decided we had to do another anthology.

Our theme is second chances (and a cup of coffee) and once more we have four very different stories that I know you’ll love.

This time we have a new author joining us, Abbie Jackson who will be making her literary debut with Shannon’s Legacy.

Over the next couple of weeks you’ll be finding out a little more about these wonderful individual stories and a little about the authors behind them.

SusanneBellamyFirst up is Susanne Bellamy with her story The Wish List.

The Wish List continues the author’s track record of rural romance set in Australia as well as contemporary and suspense romances set in exotic global locations. In the south-east Queensland city of Toowoomba, handsome accountant Jack Schulz sweeps into Julie Aster’s life. He is the answer to her dilemma and the embodiment of her wish list. Julie wants to save the animal shelter and Jack might have the answer but is he playing for love or profit? Bellamy weaves stories around the settings and people she encounters in her travels around the world. Her titles include ‘Engaging The Enemy’, ‘Winning the Heiress’ Heart’, ‘One Night in Sorrento’, ‘Sunny With A Chance Of Romance’ and ‘One Night in Tuscany’. Bellamy placed third in the 2015 Pan Macmillan short story competition with ‘Chez Romeo’.

And of course, one can’t have coffee without a treat to go with us, so Susanne shares her favourite recipe, Banana Muffins. Yum!

Banana Walnut Muffins
1 large ripe banana
1 cup milk
1 egg
60g margarine/butter, melted
180g SR flour
125g caster sugar
60g walnuts, chopped OR 125g choc bits

1. In a mixing bowl, mash banana and add milk, egg and butter. Mix well.
2. Stir flour, sugar and walnuts/choc bits into banana mixture, mixing only until ingredients are combined.
3. Spoon mixture into well greased muffin tins. Bake in oven at 190C for 20 minutes. Serve warm or cold.
